Sour Cream Coffee Cake


I couldn't remember the last thing I took a picture of, so I knew it was time to get on here... I got this recipe from Betty Crocker, but I mixed a little bit of a recipe from Barefoot Contessa. So here is the concocted version!

3 cups of all purpose flour
1 1/2 tsp of baking powder
1 1/2 tsp of baking soda
3/4 tsp of salt
1 1/2 cups of sugar
3/4 cup of butter, softened
1 1/2 tsp of vanilla
3 large eggs
1 1/2 cup of sour cream

Heat oven to 350 degrees. Butter and flour an angel food pan.
Mix first 4 ingredients, set aside.
Beat sugar, butter, vanilla and eggs. (the longer you beat them the fluffier they get).
Add flour mixture and sour cream alternating small amounts of both to blend them well.

Streusel:
1/2 cup of brown sugar
1/2 cup of flour
1 1/2 tsp of cinnamon
1/4 tsp of salt
3 tbsp of butter

You can double this for a thicker swirl in your cake. Just blend this together til the butter is small chunks. I did 2 layers of steusel in the cake and a layer on top as well. It is entirely up to you!
Layer the cake mixture and streusel. Bake for 1 hour.

Glaze:
1 tbsp of maple syrup
1 tsp of vanilla
1/2 cup of powder sugar
2-3 tsp of milk

Combined ingredients. Add enough milk that it thickly drizzles over the cake. Bon Appétit!

Chicken in Peanut Sauce


Well, I got the idea for this meal from a REAL recipe, and then concocted my own. I used a lot more spices and frankly I could tell! My tongue was singing!
Ok, so here is the recipe: (remember I threw it together) (serves 2)
2-3 chicken breasts (can be frozen or thawed)
cornstarch or flour
1-2 tbsp of butter and oil (the best of both worlds)
1 package of noodles (spaghetti or thinner, or rice noodles)
1 spoon of garlic
1/4 of a red pepper (chopped)
Peanut Sauce
Soy sauce
1/4 cup of brown sugar
4 green onions (chopped at a 45 degree angle)

I think that's all the ingredients. Boil the chicken for 10 minutes, or until cooked through (I used this as a chance to steam some vegetables.) Cut the chicken into strips and sprinkle lightly with flour or cornstarch. Start noodles. Cook as directed on the package. Heat the oil/butter to sizzling and then turn down to medium heat. Add chicken. Allow the chicken to brown on both sides. Add garlic and red peppers, saute for a minute. Sprinkle on the brown sugar. Stir in 1/4 to 1/2 cups (each) of the soy sauce and peanut sauce, just so a little is leftover. Stir in green onions. Strain cooked noodles. Stir in a few tablespoons of peanut sauce to the noodles. Top with chicken mixture. Bon Appétit!

Baked Rigatoni


I have cooked this meal before, and alas I am cooking it again. With new ingredients, trying new things and feeling a lot more miserable then I did the last time I made this. I should learn to not cook sausage when I feel nauseated. I am making Baked Rigatoni. and I'm cheating on the bread, so I won't tell you how I put that together.
 

recipe: 1 spoon of garlic
1/4 of a green pepper and a red pepper, minced
1/4 of an onion, minced

1 mushroom, minced (eeww! why do you think I minced it? I won't be able to find it.)
3 links of Italian sausage
1-2 cups of spaghetti sauce (depending on how saucy you like it)

1/2 a box of rigatoni.

Mozzarella and Parmesan cheese

Saute garlic, peppers, onion and mushroom together in pan. Cook a few minutes til onion starts browning. Transfer to bowl and set aside. Start water boiling for Rigatoni and cook as prepared. Brown sausage (while noodles are boiling). Drain grease. (Use a paper towel to soak up extra grease.) Stir in the veggies and spaghetti sauce. Drain noodles.

Layer Sausage mixture and Noodles. Top with cheese. Cook in oven at whatever temperature your bread is baking at for 10 minutes or til cheese is melted thoroughly.
